Ingredients:
- 1 loaf of soft bread
- 2 tablespoons sweet butter mixed with finely chopped garlic
- 2 yellow or red onions, sliced
- 8 thin slices sweet pickles
- 4 thin slices Swiss cheese
- 4 thin slices prosciutto or ham
- 8 thin slices home-made roast chicken or roast beef ( recipes follow)
- 1 jar roast peppers
- 2 avocados, thin sliced
- fresh mixed green salad
- homemade vinaigrette dressing for salad( recipe follow)
Cooking Steps: (need a Panini grill)
- In a sauce pan, sauté onion until caramelized. This can be done a day or hours ahead.
- Preheat Panini grill.
- Using rubber spatula spread butter mixture on one side of bread.
- On unbuttered side of bread, layer Swiss, roast beef or roast chicken, prosciutto, cooked onion, roast peppers, sweet pickles and avocado or mixed green. Sprinkle salt and pepper, if needed.
- Cover sandwich with second piece of bread, buttered side up.
- You can grill the sandwich immediately or you can wrap the entire sandwich tightly in plastic wrap and place in the refrigerator a day before cooking.
- Place sandwich on pre-heated Panini grill and toast until bread is desired crispiness and cheese is melted, about 5 minutes.
- Remove from grill and cut the sandwich into wedges and serve; serve the sandwich with mixed green salad, using vinaigrette salad dressing.
- Homemade vinaigrette salad dressing:
- In a bowl, mix together balsamic vinegar (1 Tsp), DJ mustard (1 tsp), lemon zest and lemon juice (half lemon), honey (1 tsp), chopped garlic, salt and pepper until all ingredients are combined.
- Drop in 1/3 cup olive oil and whisk constantly.
