Ingredients: (makes 6 to 8 servings)
- 1 lb beef flank steak
- 3 stalks scallions, cut 1” long
- 5 pieces sliced ginger
- 11/2 lbs asparagus
- 1 shallot, finely chopped
- 1 jalapeño, thinly sliced
- vegetable oil
Marinade:
- 1 teaspoon salt
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon white wine
- 1 teaspoon cornstarch with 1 tablespoon water
Seasoning:
- 1 tablespoon hot bean sauce
- 2 tablespoons rice wine or dry sherry
- 1 teaspoon orange juice
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar
- 1 teaspoon sesame oil (optional)
- 2 teaspoons corn starch
- 2 tablespoons water
Cooking Steps:
- Cut beef crosswise into 1”x 2” slices; marinate beef for 20-30 minutes.
- Prepare for seasoning sauce, in a small bowl, mix well all ingredients, ready to use.
- Clean asparagus and peel the skin, trim off the tough ends. Place asparagus in boiling water and blanch for 1 minute. Then remove and toss them into the ice cold water; drain and dry.
- Heat the oil in a sauté pan with high heat. Stir-fry jalapeno for 30 seconds, add beef and continue stirring for 30 seconds or until beef is medium rare. Transfer beef into a plate.
- Heat the oil in the sauté pan, stir-fry the shallots for few seconds; add green onions, and ginger, stir until aromatic (about 30 seconds). Add beef and cook for 20 seconds.
