Ingredients: (makes 6 to 8 servings)

  • 1 lb beef flank steak
  • 3 stalks scallions, cut 1” long
  • 5 pieces sliced ginger
  • 11/2 lbs asparagus
  • 1 shallot, finely chopped
  • 1 jalapeño, thinly sliced
  • vegetable oil

Marinade:

  • 1 teaspoon salt
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon white wine
  • 1 teaspoon cornstarch with 1 tablespoon water

Seasoning:

  • 1 tablespoon hot bean sauce
  • 2 tablespoons rice wine or dry sherry
  • 1 teaspoon orange juice
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil (optional)
  • 2 teaspoons corn starch
  • 2 tablespoons water

Cooking Steps:

  1. Cut beef crosswise into 1”x 2” slices; marinate beef for 20-30 minutes.
  2. Prepare for seasoning sauce, in a small bowl, mix well all ingredients, ready to use.
  3. Clean asparagus and peel the skin, trim off the tough ends. Place asparagus in boiling water and blanch for 1 minute.  Then remove and toss them into the ice cold water; drain and dry.
  4. Heat the oil in a sauté pan with high heat. Stir-fry jalapeno for 30 seconds, add beef and continue stirring for 30 seconds or until beef is medium rare. Transfer beef into a plate.
  5. Heat the oil in the sauté pan, stir-fry the shallots for few seconds; add green onions, and ginger, stir until aromatic (about 30 seconds).  Add beef and cook for 20 seconds.
