Ingredients: (makes 6 to 8 servings)

  • 3 large carrots, cut in cubes
  • 3 large potatoes, cut in cubes
  • 1 large or 2 small cucumbers, diced
  • 6 ounces frozen peas
  • 3 or 4 eggs
  • 4 ounces (lunch meat) ham, diced
  • 1 stalk green onion, finely chopped
  • 1/2 teaspoon sugar
  • 1/2 to ¾ cup real mayonnaise
  • A pinch of sugar, salt and pepper

Cooking Steps:

  1. Cut carrots and potatoes into 1/2-inch cubes.
  2. Dice cucumbers into smaller cubes; add salt and soak for 15 minutes.  Squeeze to dry.
  3. Place carrots, potatoes, whole eggs in a large pot, cover with water, bring to a boil; turn heat to medium and cook until carrots are tender.
  4. Drain and let it cool for a minute or two.
  5. Cut cooked eggs in cubes; cut ham in small squares.
  6. Boil the water in a small sauce pan; cook the frozen peas for a minute. Drain and rinse with cold water.  Drain and dry.
  7. In a large bowl, combine carrots, potatoes, peas, eggs, ham and cucumber; mix them with mayonnaise, toss them well.
  8. Season with sugar, salt and pepper.  Sprinkle with chopped green onions or cilantro.
  9. Chill for 30 minutes before service.
