Ingredients: (makes 6 to 8 servings)
- 3 large carrots, cut in cubes
- 3 large potatoes, cut in cubes
- 1 large or 2 small cucumbers, diced
- 6 ounces frozen peas
- 3 or 4 eggs
- 4 ounces (lunch meat) ham, diced
- 1 stalk green onion, finely chopped
- 1/2 teaspoon sugar
- 1/2 to ¾ cup real mayonnaise
- A pinch of sugar, salt and pepper
Cooking Steps:
- Cut carrots and potatoes into 1/2-inch cubes.
- Dice cucumbers into smaller cubes; add salt and soak for 15 minutes. Squeeze to dry.
- Place carrots, potatoes, whole eggs in a large pot, cover with water, bring to a boil; turn heat to medium and cook until carrots are tender.
- Drain and let it cool for a minute or two.
- Cut cooked eggs in cubes; cut ham in small squares.
- Boil the water in a small sauce pan; cook the frozen peas for a minute. Drain and rinse with cold water. Drain and dry.
- In a large bowl, combine carrots, potatoes, peas, eggs, ham and cucumber; mix them with mayonnaise, toss them well.
- Season with sugar, salt and pepper. Sprinkle with chopped green onions or cilantro.
- Chill for 30 minutes before service.
