Rice Cake 香軟椰香年糕

Ingredients

  1. 3 eggs
  2. ½ stick(¼ cup) melted butter
  3. 1 ½ cup warm milk
  4. 1 can (14 oz) coconut milk
  5. 1 ½ cup sugar
  6. 1 bag (16 oz) Glutinous Rice Flour or sweet rice flour
  7. 1 tsp baking powder
  8. 1 cup nuts(optional)
  9. cooking spray for the pan

Steps

  1. Preheat oven 350F
  2. Prepare a big baking pan (7 x 11 or 9 x 13) grease the pan with cooking spray
  3. In a large bowl, beat in the 3 eggs, gradually add the remaining ingredients except the nuts.  Mix well.
  4. Add nuts(optional)
  5. Pour into the baking pan
  6. Bake for 1 hour
